Almond sponge cake step by step

On 16 February every year, almond day is celebrated around the world. Almonds are one of the most nutritious nuts on the planet, providing a host of benefits to the body.

Among these benefits, which we will see below, it is worth highlighting that almonds help to strengthen bones, hair, skin and are good for the heart, which is why the Spanish Heart Federation recommends their consumption.

They are rich in fibre, protein, vitamins B and E, healthy fats, iron, calcium, phosphorus… Snacking on almonds or eating them mid-morning can help maintain healthy cholesterol levels; they also contain more fibre than any other nut.

For this reason, and on the occasion of World Almond Day, we bring you a delicious recipe for a spongy almond sponge cake that is super easy to make to incorporate this nut into all your breakfasts and snacks.

Properties and benefits of almonds

    • Source of energy:Their carbohydrate content provides us with energy to face the most demanding day. And the iron they contain helps to combat anaemia.
    • Good for the heart: Studies (Dr Helen Griffiths of Predimed is one of the most recent) have shown that people who eat almonds frequently, about five times a week, are 50 per cent more likely to reduce their risk of heart attack and other cardiovascular diseases. Almonds strengthen and protect the walls of the arteries thanks to the amino acids and fatty acids they contain.
    • Good for bones and teeth: Because of their high phosphorus and magnesium content, almonds help us to have strong teeth and bones. They also take care of our muscles, combat anxiety and irritability and promote good rest, preventing insomnia. Almonds also prevent osteoporosis due to their calcium content.
    • Good for the brain: With regular consumption of almonds we can increase brain function, so that the brain remains clear-headed and active.
    • Improve the immune system: The zinc contained in almonds improves the functioning of the immune system, promotes growth and combats fatigue or tiredness. The vitamin A they contain performs the same functions and also helps to detoxify the body.

Recipe for almond sponge cake

Ingredients for making the almond sponge cake:

  • 1 teaspoon baking powder or yeast.
  • 150 grs. of butter.
  • 1/2 glass of liqueur.
  • 1/2 glass of liqueur.
  • Lemon zest.
  • A handful of toasted almonds.
  • A piece of butter and flour to grease the mould,
  • 250 grams of ground almonds.
  • 5 tablespoons sugar, erythritol or stevia.
  • 5 eggs.
  • Icing sugar or icing sugar.

Steps to follow to make your sponge cake

  • Separate the yolks from the whites. Beat the egg whites until stiff and set aside.
  • Whisk the egg yolks with the sugar until they whiten. Add the liqueur and mix.
  • Leave the butter at room temperature long enough to become liquid and add it to the yolks. Add the lemon zest and mix with the whipped egg whites.
  • Finally, add the ground almonds and the baking powder and mix all these ingredients together with a wire whisk.
  • Grease themould with butter and sprinkle it with flour. Pour the sponge cake batter over it.
  • Bake at 175 degrees for 20 – 25 minutes.
  • Leave the cake to cool and unmould it.
  • Finally, decorate with the icing sugar or icing sugar and the toasted almonds.
