Refreshing lemon cupcakes recipe

No matter what season it is, there is always room for a sweet treat at any time of the day… for breakfast, as a dessert after lunch with coffee or as an afternoon snack, right?

The truth is that with the arrival of the good weather and the rising temperatures, cooler or refreshing sweets are more appealing. That’s why we propose a recipe for lemon muffins.

Ingredients: Lemon cupcakes

  • 125 grams of butter
  • 225 grams of sugar
  • 2 large eggs
  • 150 grams of pastry flour
  • 125 grams of flour, all-purpose
  • 90 ml milk
  • 3 tablespoons lemon juice
  • 1 tablespoon of whipping cream
  • 1 teaspoon lemon zest

Ingredients for the topping:

  • 225 grams of cream cheese at room temperature
  • 1 teaspoon vanilla essence
  • 115 grams of butter
  • 450 grams of sieved icing sugar (it is important to sieve it, otherwise it will form lumps in the cream).

Preparation of the lemon cupcakes:

Preheat the oven to 180º. Prepare the muffin tins with their liners (special paper for making muffins).

Sieve the two flours and set aside. Pour the milk, lemon juice and cream into a bowl. Reservation

Beat the butter and sugar together until creamy and fluffy. Add the eggs one by one until well blended. At low speed add one third of the flour, continue beating and alternate with the milk mixture and the flour until everything is added. Add the lemon zest.

With an ice-cream scoop, fill three quarters of the prepared ice-cream cups with the batter mixture.

Bake for 20-25 minutes or until a cake tester is inserted and it is dry.

Once ready, leave to cool on a wire rack until completely cooled.

Preparation of the coating:

Ingredients should be at room temperature

Beat the cream cheese and vanilla essence until smooth and creamy, add the butter. Reduce to low speed and add the previously sieved icing sugar. You can put this preparation in the fridge while the biscuits cool completely. The topping can be refrigerated for up to three days and when ready to use it is brought to room temperature and beaten again at low speed.

Assembly of the cupcakes:

With the help of a piping bag and a round-tipped nozzle, decorate the cupcakes to your liking, you’ll see that it’s a snap… Delicious!
